Cashew Broccoli Noodles

This easy to make Noodles stir fry will fill you up


Ingredients

  • Cashew

  • Sesame Seeds

  • Broccoli

  • Portobella Mushroom

  • Fried Onions ( any onions will do, I only use this when I run out of  my usual green or purple onions)

  • Red Pepper Paste

  • Bell Peppers: red; Yellow

  • Shrimps

  • One  medium sized  red potato

  • Cilantro

  • Vegetarian Noodle

  • Dry Seasons: Thyme; Curry; All Seasoning; bouillon powder.


How to make stir fry

Broccoli Stir Fry Noodles

Preparation

Wash and cut all your vegetables.

I like to marinate my mushrooms after washing. The time to marinate does not matter to me. I just like that the

Seasonings has some time to get into the mushrooms.

  • Also You can blanch your mushroom or steam your mushroom briefly. Not enough to cook it all the way.

  • Steam for like 5 mins.


How To Make Broccoli Stir-Fry

Start browning your onions.

Add the pepper paste to the onions; stir together very well.

Add your shrimp in ; and let it cook until the shrimps are done in about 6-7 mins

Once cooked.

Add your pre-seasoned mushrooms and peppers.

Add your dry seasonings

Stir well together

Let it cook for 5 mins

Add your broccoli

Stir all together

Cook for another 5 mins or until the  broccoli is as  tender as you want.

 

How to Cook The Vegetarian Noodle

This part is easy as all you have to do is follow the instruction on the back of the noodles.

For me: I soaked in room temp water for 1 mins ; then in hot water for 5 mins

Drain your  noodles thoroughly to avoid excess water n the stir fry.

Add the noodles to the stir fry

Let everything cook together for another 3 mins; and you are all set.

 

Serving

I garnish mine with the Cilantro; roasted cashew and sesame seeds for extra taste and experience.
