Chinese Fried Rice
Hello happy People!!! I finally took time to write down this recipe… whew!!!
I guess writing the recipe is the hardest part of this entire process.
Moving on I declare that I will write more and post more on my blog…..lol.
I enjoy Chinese food any day anytime, but I tell you if you can find a recipe and make it yourself; you will see that home cooked is the best.
So, the next time you are craving some Chinese food; try this recipe. The original recipe is not mine; I read a couple of recipes online and put this together. The good thing about this recipe is that it is meatless; you may say vegetarian; some people eat eggs on vegetarian diets.
Please note I really do not measure when I cook, I just cook by following my heart especially when seasoning. I typically go slow; taste and add seasonings as I go.
Chinese Fried Rice
Ingredients
2 cups of brown rice
Carrots and peas
1 Purple Onion
1 Hard Tofu
1 egg
Garlic paste
Peanut butter powder or paste
Soy sauce
Hoisin Sauce
Tamarind: same as soy just lower sodium
Wash and cook your brown rice. You get better result if your rice is a day or more old. If you do not have old rice; make sure to cool down your freshly cooked rice in the refrigerator.
While your rice is cooking or cooling down
Get the water out of your firm Tofu by wrapping it in a clean napkin and placing a heavy object like a pot on it to drain water from the tofu. Once drained, you want to slice your tofu in to thin slices; place on the baking tray; season with seasoning salt then spray with oil and bake at 375 degrees for about 20 mins or until browned.
Now let’s start prepping our vegetables
Cut your spring onions, and your purple onions
Get your carrots and peas ready. I used the frozen one; so really it was good to go.
Season your egg and fry; make sure it’s not too dry. Once done get it out of the frypan/wok
Using the same wok/frypan
Start frying your purple onions; add the garlic paste; add your peas and carrots and stir very well
Add the tofu and let it all cook together for about 5 mins.
The Sauce
In a bowl; add a scoop of the peanut butter powder or paste
Add tamarind
Add soy sauce
Add some Hoisin Sauce
Add white wine vinegar
Stir everything together.
Now it’s time to let everything come together.
Add the bowled rice to the vegetable.
Then add the sauce.
Add the fried egg.
Add the spring onions and stir.
Taste as you stir
Feel free to add more seasoning as needed for optimal taste.
