Edamame Fried Rice

This quick recipe reminds me of  my college days in Nigeria where the goal was to eat tasty food but cost effective meals.

Of course our go to food was rice; what we called “Concoction rice”.

This recipe here outperforms  the “concoction rice” though. This easy to make rice is filled with nutrients. Edamame are immature or young soybean. They are rich in vitamins and high in protein. They are good meat substitute.

Ingredients

  • Cooked Jasmine rice - 1 Cup

  • Yellow Bell Pepper – ½ of a medium size

  • Orange bell pepper - ½ of a medium size

  • Purple onion – 1 medium sized,

  • Spring Onion – ½ cup diced

  • Shredded Carrots – 1/3 cup

  • Ready to eat Edamame – 1/3 cup

  • CrayFish – 1 tablespoon

  • Dry Seasoning

 

How to Make Edamame Fried Rice

You have to use days old cooked rice or if freshly made ; put it in the refrigerator to make it cold.

The rice take all the ingredient better when cold.

 

Start Cooking the Stir Fry

  1. Brown your purple onions.

  2. Add the shredded carrots and stir together. Let it cook for about 1 minute.

  3. Add the bell peppers.

  4. Add the Edamame

  5. Add the crayfish

  6. Add the seasoning

  7. Add the spring onions and stir everything together.

  8. Add the Jasmine rice and mix all together.

 

  • Ensure that the rice is well mixed with the stir fry.

  • You may add the rice gradually to make sure the vegetables and rice are to your preferred proportion.

Serve Hot!
