Chickpeas Salmon Salad 

This salad recipe is packed with proteins and anti-oxidants. 

Chickpeas are a great source of plant protein; the salmon also provide a good amount of protein as well. 


Salmon Salad

Ingredients: 

1 Salmon Steak 
Bell Peppers ( Red; Yellow; Orange) 
1 13g Can Chickpeas  
1 Onions 
2 medium size Plantain 
Lettuce 
Baby Spinach 
Avocado 
Broccoli 
Carrots 

Dry Seasoning (Black Pepper, Chicken Rub and pink Himalayan salt) 

 

Instructions:  

  1. Wash all your vegetables thoroughly. 

  2. Cut all the vegetables  

  3. Place the cut peppers; broccoli; carrots and chickpeas in a flat tray; Add a tablespoon of olive oil and some seasonings 

  4. Roast in the oven at 425 degrees for 20-25 mins 

  5. Airfry the plantain while the veggies are in the oven 

  6. Once done, Cut the roasted vegetables into smaller bits 

  7. Plate the salad as desired. I started by layering my lettuce first 

The Dressing:  

Roasted Peanuts; Sriracha sauce Lemon, olive oil. 

  • Blend the peanuts; add one tablespoon of Sriracha sauce, a squirt of lemon and one tablespoon of Olive oil. 

  • Mix everything together
