Stewed Beans, Yam & Plantain

Beans is a staple food in Nigeria. Growing up I regarded beans as a boring and tasteless meal, I guess this was based on the fact that it was made in one style only. I have revisited beans and I think it’s growing on me. Here is an alternative way to make beans more attractive. Using the instant pot even makes this a 100 times better. Instant Pot Recipe

Ingredients:

1/2 tuber of  medium sized Ghana Yam

1  13g can black-eyed peas

1 medium size ripe plantain

Smoked fish- optional

Crayfish

Dry seasoning…. Chicken Bouillon; seasoned salt; powder thyme

Spinach

Broth- optional. You can use water.

Instructions:

  1. Add all ingredients except the spinach to the instant pot, cook under high pressure for 10 mins.

  2. Once cooked; mash to desire. I like to have chunks of the yam,

  3. Add the spinach. Mix everything together.

  4. Serve
