One Pot Asian- Style Noodle Soup
This quick and easy to make noodle soup will make for a good weeknight dinner. I used the Filipino thin rice noodles Pancit Palabok. The package says they cook in 12 minutes. Per usual I rarely measure my ingredients I cook by intuition, so I encourage to add the seasonings gradually. Although, I will give estimate measurements in this recipe. Ingredients:
1-piece Pancit Palabok (one pack has 4 pieces).
½ pound of Jumbo Shrimps
½ large Carrots
1 Medium White Onions
2 Stalks of Celery
1 Cup Portobello Mushroom
1 tablespoon Oyster Sauce
1 Tablespoon Fish Sauce
1 Tablespoon Hoisin Sauce
2 Piece Star Anise
6 Cloves
2-3 stalks Fresh Herbs: Dill; Mints; Rosemary
Spring Onions for garnish
Parsley for garnish
Instructions
Bring two cups of water to boil.
Add your noodles
Add all the ingredients except the Spring onions and Parsley
Cover the pot and let it cook for 15-20 minutes; enough time to cook the mushrooms; shrimps and noodles.
Once cooked add the spring onions and parsley.
Serve hot with slices of lime (Optional)
