Pampano Fish with Plantain
The story behind today’s recipe is the power of a community. The shorter version is that I was influenced to buy the Pampano fish at my regular Asian Fish Market by my son’s friend’s mother. I had no intention of getting Pampano when I went to the Fish Market.
As we were talking about the possible recipe for the fish; another lady joined us and then another guy.
We all ended up sharing different ways we wanted to make the pampano fish.
This is actually my time trying it and I can testify that it’s a good one. Have you ever had the Pampano fish?
Ingredients
One Pampano Fish
1 tsp All Seasoning.
1 tsp Ginger Powder
1 tsp Paprika
1 tsp Oyster Sauce
1 tsp Cameroun Pepper (Optional)
1 tsp White Wine Vinegar
Pure sesame oil
Bell Pepper
Any Greens of your choice ( Yu Choy); cabbage; kale will do well
One unriped Plantain ( not Green Plantain)
How To Make Pampano Fish
Clean and gut your fish.
Wipe out excess water from your fish
Make Superficial about 1/2 inch diagonal cuts into both sides of the fish to allow seasoning to get into the fish.
Combine all the seasonings together and rub on your fish.
Then marinate for at least 1 hour.Place your cut plantains topped with peppers and the greens
Preheat your oven to 400 FBake for 30 mins ( I then broiled mine uncovered on low for probably 5-10 mins to brown the fish)
You don’t have to do the broiling part; that made the gravy dry up a little.
